Recipe for classic cold cucumber soup with Bulgarian yogurt

Tarator is a classic Bulgarian dish, perfect for hot summer days. With our fresh Rosela cucumbers, it becomes even more delicious and refreshing.
Classic cold cucumber soup with bulgarian yogurt.

For its preparation you will need:

  • 2 medium-sized cucumbers Rosela
  • 500 ml yoghurt
  • 2-3 garlic cloves
  • dill
  • walnuts
  • salt
  • cold water.

  1. Cut the cucumbers into small pieces, crush the garlic and mix them with the yogurt.
  2. Add finely chopped dill, crushed walnuts and salt to taste.
  3. Thin with cold water to desired thickness.
  4. Let the tartare cool in the refrigerator for at least 30 minutes before serving.
